For Paula Hayward and Lillian Oler, the mystique of the “pop-up” is becoming second nature.
Following efforts at Christmas and Valentine’s Day, the duo — Paula of Bear Moon Bakery, and Lillian from Assemble Cocktail Workshop — put their heads together once again and came up with Bettina’s Sailing Club Tiki Bar, celebrating summer, sand and surf, right on the Hill Country Mile.
“Paula Hayward and I come together a couple times a year to make these popups. Always vintage glasswear, something history-inspired,” Oler says, “and we thought this theme would be great for the summertime.”
Bettina was the wife of one of Boerne’s earlier settlers, bringing a dash of Boerne tradition into the mix.
Bettina’s is good for a one-month run, through July 6, at 421 S. Main St., squeezed between Bear Moon and Hamby’s, a block from River Road Park.
With drinks bearing names like Lost Lagoon, Rum Ritual, 3 Dots and A Dash, and Tokyo Drift, Oler says the drink menu resembles something Bettina’s customers might just find at some far-away sailing club.
“And who doesn’t like a good tiki bar?” Oler adds.
