Health inspector on the way out, but scores coming in
Kendall County Health Inspector David Sueltenfuss is retiring after serving the region for nine years – but not before providing a slate of new health inspections on local eateries in Boerne.
This week, reports posted following inspections by the outgoing safety official showed three establishments made the grade.
The Dodging Duck Brewhaus, 402 River Road
Hours: 11 a.m. to 9 p.m. Sunday- Thursday, 11 a.m. to 10 p.m. Friday and Saturday Regarded by many patrons as a “hotspot,” this locale is known for live music, indoor and outdoor seating and its expansive menu. Diners can enjoy burgers, nachos, fish and chips, soups, salads and a crème brûlée to finish. Daily and weekly specials are subject to change. In addition to food options, The Dodging Duck Brewhaus has a wine and on-tap menu.
Sueltenfuss made several observations during his stop: Some foods in the grill cooler drawers were being stored at the incorrect temperature (discarded on-site); the ice machine had mildew (discarded on-site); numerous missing date marks; unclean floors along the back wall, along with unclean shelves; floor in the kitchen in front of the grill in poor repair and must be replaced, along with the floor in front of the ice machine.

Sueltenfuss’s observations marked off for the following: Pink mildew in the ice machine (discarded on-site); incorrect sanitizer level in the automatic dishwasher; an expired food-handler’s certificate; rusted shelves in the cooler; unclean door gaskets on the pizza cooler; rodent droppings observed by the water heater; an incorrectly stored knife; unclean floor of the walk-in cooler; unshielded lights; and the ceiling in the kitchen in poor repair.
