WHERE KENDALL COUNTY SCHOOLS EAT: A CLOSER LOOK
COMFORT — Check-ins conducted by the Kendall County health inspector found local school cafeterias operating at a high level of compliance this week, though some were told to correct a few violations.
Inspection scores ranged from 91 to 99, with officials noting equipment needing repairs, dishwasher temperatures that needed adjusting and improper storage of canned goods.
Comfort High School, 143 U.S. 87
The recent inspection noted the following: The automatic dishwashing station did not meet the required temperature of at least 160 degrees in the first rinse. The first cycle was 149.7, second cycle 158.3 and third cycle 159.6 degrees.
Corrective action was taken on-site, with a school official saying they would use the three-compartment sink for washing and sanitizing purposes until maintenance evaluates and confirms the dishwashing station reaches the required temperature. A follow-up visit confirmed the issue was fixed.

The inspection report stated that pizza needed to be warmed at a higher temperature, and the timer was adjusted. Temperature logs verified this was carried out.
The dairy cooler showed an ambient temperature of 48 degrees, but nothing was stored. The inspector noted a school official would monitor it and have maintenance check it. Concentration of the sanitizing solution was below the required amount. This was corrected on-site.
Other notations noted Items in the walk-in freezer needed to be stored at least 6 inches above the ground. A gap was found at the rear exit, which was documented during the last visit.
A maintenance order will be created, the county inspector was told.
