Where Boerne Eats: A Closer Look -- Burger joint, brewery score high on routine inspection

BOERNE — With minor issues to fix, Hamby’s passed its routine inspection with a 96 score as handled by the Kendall County Health Office.

On July 2, the health office credited Hamby’s, at 437 S. Main St., with: Proper cooling times/temperatures; having food obtained by approved sources; and having a certified food manager on site, demonstrating proper knowledge of duties.

Many other in-compliance regulations were observed in the popular Main Street burger stop, which earned them a high grade.

Though receiving high marks, the health office found three minor issues contributing to four points being deducted:

• Wiping cloths not being properly used/ stored (1 point).

• Expired dates on food (2 points).

• Some non-food contact surfaces were not clean (1 point).

Wiping cloths were stored on top of food prep tables, which can unsanitary and cause cross-contamination with chemical products. Some corn dogs were found past their expiration date and were discarded immediately.

All three deductions were satisfactorily rectified before inspectors departed.

e e Inspectors also noted mold in the walk-in cooler and unclean onion pallets, which need thorough cleaning or replacement. Hamby’s management directed clean-up and elimination of those issues.

Receiving a slightly higher score and recording fewer issues, Cibolo Creek Brewing Co., 448 S. Main St. — directly across the street from Hamby’s and under the same ownership — earned a 97 score on its latest routine inspection.

July 1 saw the health office arrive at Cibolo Creek and credit the brewery with: Proper food preparation methods to separate and prevent contamination; food received at proper temperatures; and proper handwashing and gloves usage.

Many other in-compliances were observed, leading to the high grade.

There were, however, a few demerits the health office noted for the brewery:

• Enviromental contaminations (1 point).

• Uncleaned non-food surfaces (1 point).

• Physical facilities not maintained (1 point).

Several food items in the freezer were stored on the floor. To be in compliance, food items must be mounted six inches above the floor.

Floors under certain pieces of equipment were not clean and ceilings tiles by hot-side work areas were observed with lint.

Both issues reportedly were taken care of by day’s end, as some of the cleansing and lint removal cannot be initiated with food preparation still taking place.

The floor in the walk-in cooler was not sealed. Concrete flooring needs coating to prevent build-up of dirt. Cibolo Creek reported contacts to deal with the floor Any questions or concerns about health inspections can be addressed to the Kendall County Health Office at 830-249-9343.
