Kendall County Health Inspector David Sueltenfuss recently took to the streets to cover four Boerne-area eateries. Each passed with a high score — the top being 100 — but Sueltenfuss still found items that needed correcting.
The Cup at Bergheim, 919 Texas 46 East, Suite 103 The local shop offers craft coffee, loose-leaf teas, breakfast and lunch. Also on the menu are alternative milks for special diets and allergies, waffles served with fresh berries, paninis and a variety of other bites.
Sueltenfuss worked with owner Karen Cate for the eatery’s inspection and found nothing out of compliance.
Score: 100
Boerne Epicure Gourmet Delicatessen, 111 Staffel St.
The deli serves freshly prepared soups, salads and gourmet sandwiches and is considered a long-time favorite among locals. According to its website — boerneepicuredeli.com/ touts — the dining spot offers high- quality ingredients, a charming atmosphere and a commitment to flavor. During the inspection, Sueltenfuss said he found containers of food sitting in a pooled liquid, expired dates, an employee without a beard restraint and another carrying a wiping cloth in his back pocket, and foods in trays at temperatures above the standard 41 degrees for cooling.
The staff took immediate action, discarding out-of-compliance foods and donning the proper attire to work in the kitchen.
Score: 90

Menus feature lunch and dinner options, and brunch on Sundays. A Chef Mark Bohanan restaurant, the fare ranges from jumbo crab cakes to Australian red deer chops, accompanied by a full cocktail menu.
The 90-minute inspection found no hand soap at the bar sink, rusted shelves in the dishwasher area, unclean walls underneath the dishwasher area, food debris in the walk-in cooler along with shelves that needed cleaning, a cracked floor tile in the bar, and missing hand-washing only signs.
Sueltenfuss gave the restaurant five days to install baseboards and clean the noted areas.
Score: 91 Darkside Brick Oven Pizza Co., 25 Truss Drive Owners Michael and Denice Hawkes designed their eatery with individually commissioned props and replicas from various artists around the world, according to the restaurant’s website at darksidebrickovenpizza. com/.
Each pizza pie is cooked in a brick oven, and diners are encouraged to try a variety of toppings, including pepperoni, ground beef and prosciutto.
During his inspection, Sueltenfuss noted mildew in the ice machine, no thermometers in the walk-in cooler, no hand towels or soap at a pizza-area hand sink, rusted shelves in the cooler, several employees not wearing hair or beard restraints, unclean floors and knives stored in an area with food debris.
Corrective action was immediately taken, the inspector said.
