The Dinig Divas are back! The minutiae of life overtook us all for a while, but we just had to get together this summer and catch up. And what better place to do it than the heart of Boerne’s historic downtown: The Dienger Trading Company.
Standing tall and elegant at the corner of Blanco and Main, the building feels like a gracious old friend: full of stories, character and that unmistakable small-town Texas charm.
The four of us caught up over coffee, Earl Grey tea, and hot chocolate (we’re looking at you, Erin) before ordering off the robust and varied menu.
Erin thoroughly enjoyed the chicken pot pie, which featured a beautifully golden, flaky crust that lifted cleanly from the bowl. “The presentation was impressive,” she said.
Beneath the crust was a rich, savory filling packed with tender chicken and comforting flavors. Served alongside a crispy helping of French fries, the meal was hearty and satisfying. For anyone seeking classic comfort food in a historic setting, this dish was a must-try choice.
Kelly, a 25-plus year resident of Boerne, finds memories flooding back every time she steps inside The Dienger.
“I still remember when this was our public library. We’d meet up with friends every week for story time: the sights, the smells, it all comes rushing back,” he said.
Kelly is the type who finds one standout dish and orders it every visit. For her, it’s the avocado toast. It arrived on delicious grilled ciabatta bread topped with flavorful smashed avocado and sweet heirloom cherry tomatoes. She swapped the goat cheese for feta and requested the over-easy egg on the side.
“I only like eggs in baked goods,” she laughed. Even on this visit when feta wasn’t available, it was still worth every penny. “Every time I’ve had it, it’s been perfectly crunchy, creamy, fresh, and absolutely delicious.”
Nellie settled on the Build Your Own (BYO) omelet, where you pick three items from the 14 options. She chose spinach, goat cheese and Klein’s bacon.
“I had just read that Klein’s bacon was named Grand Champion at the 2026 Cured Meat Championship, so I had to add that as an option, and I was not disappointed,” Nellie said. “The ratio of goat’s cheese to bacon and spinach was perfect, enough to be tasty, but not overpowering.”
The portion was perfect, and the accompanying salsa added a refreshing lightness to the dish.
Pam chose the eggs benedict with ham and potatoes and declared it a winner.
“The ham was savory, the hollandaise rich without being overpowering, and the potatoes were perfectly seasoned with a crisp exterior and fluffy center,” she shared.
One thing that stood out was the eggs. “They leaned more toward a jammy center than the classic runny yolk,” Pam said. “While it wasn’t the traditional preparation, it was equally delicious and added a creamy, velvety texture that paired beautifully with the rest of the dish.
“Every bite was delicious and well balanced. I’d happily order it again,” she added.
Beyond the plates, the experience itself felt special. The historic bistro space with its vintage details, thoughtful layout and soft window light creates a warm, welcoming atmosphere that’s nostalgic.
Service was attentive and friendly, adding to the charm. As Erin put it, “The building adds so much character to the meal.”
All in all, The Dienger’s Bistro is the ideal spot for catching up with friends over brunch. Cute, comforting and full of smalltown soul, it’s exactly why people keep returning.
